    Filipino spaghetti is notoriously sweet—the mere thought of which would make Italians foam in the mouth. I make my spaghetti sweetish, rather than sour. Amongst all local spaghettis, Jollibee surely takes the cake. The secret ingredients are liver spread, milk, and sweetened condensed milk. I made this copycat for my grandson’s 4th birthday.     The name of this dish is completely misleading because it is not a fondue (fahn-DOO). The word fondue comes from the French word fondre, meaning to melt, and refers to a classic Swiss dish consisting of melted cheese into which bite-size chunks of bread are dipped.      Mechado is one of our favorite do-do-do dishes (that include  asado , estofado, and  menudo ). Rich in tomato sauce, they’re called sarciado (from the root word sarsa, meaning sauce) and are perfect for the Sunday family lunch. In Havenhill, however, do-do-do dishes are usually cooked on a weekend, aged for a few days, and served mid-week. By then the flavors have blended and fully developed. Dry cuts of beef are larded with fat to keep them moist; the cooked meat is more succulent, tender, and flavorful.     The word caldereta comes for the Spanish caldero meaning cooking pot. It is a tomato-based stew of pork, chicken, or goat meat. For really festive occasions, caldereta ought to be a whole goat—a throwback to my Ilocano heritage (Ilocanos are the No.1 goat-meat eaters in the Philippines). When my daughter was baptized in November 1971, my father bought a goat, dressed it himself, and cooked it.
